Baked Apples in the Microwave

    Apples bake well in the microwave and take much less time than in the oven. Serve this recipe with custard or vanilla ice cream for a quick and delicious dessert.

    Serves: 4 

    • 4 large juicy apples
    • 3 tablespoons ground almonds
    • 1 teaspoon sugar
    • 2 teaspoons butter
    • 3 tablespoons crystallised ginger, finely diced
    • 2 tablespoons apple juice

    1. Wash and dry the apples and cut out the cores. Prick the apples all over with a toothpick to prevent them bursting in the microwave.
    2. In a bowl, combine remaining ingredients. Use to fill the apples.
    3. Place apples in a microwave-proof dish and cook, uncovered, at 600 watts for approximately 6-8 minutes. Let rest 3 minutes. Enjoy!
