Dutch Apple Tart

    A beautiful apple and sultana tart with a woven lattice top. This is the perfect warm dessert with vanilla ice cream.

    Makes: 1 apple tart

    • Pastry
    • 250g plain flour
    • 180g butter, softened
    • 80g caster sugar
    • 1 teaspoon cinnamon
    • 2 eggs, beaten
    • Filling
    • 1 kg tart apples, peeled, cored and sliced
    • 50g caster sugar
    • 70g sultanas
    • 3 teaspoons cinnamon

    1. Preheat the oven to 170 degrees C.
    2. In a bowl, mix together the flour, butter, sugar, cinnamon and 3/4 of the beaten eggs (reserve the remaining egg for brushing). Knead to make a smooth dough.
    3. Roll out 3/4 of the dough to cover the bottom and sides of a greased 23cm springform cake tin.
    4. Mix the apples with the caster sugar, sultanas and cinnamon. Fill the cake tin.
    5. Roll out the remaining dough and cut long strips 1cm wide. Weave a lattice over the top of the pie and trim the edges. Brush with remaining egg.
    6. Bake 1 hour, or until pastry is light golden brown.

    Is there anything else to say? My son asked for me to make an apple pie with the apples from our backyard tree, and his eyes lit up and his smile is so huge when he smelled it baking, then when he ate it!
