Baked Apple Cups

    Apples are halved, hollowed out and filled with raisins, dates and spice in this delicious and healthy dessert. Very nice with Greek yoghurt.

    Ingredients
    Makes: 8 apple cups

    • 4 Granny Smith apples
    • 100g dates, diced
    • 100g raisins, diced
    • 2 tablespoons muscovado sugar
    • 1 teaspoon mixed spice
    • 1 small orange, zested and juiced

    Directions

    1. Preheat oven to 150 degrees C.
    2. Cut each apple in half through the circumference and dig out the core with a spoon from both halves.
    3. Mix together all remaining ingredients except the orange juice and use to fill the hollows in the apples.
    4. Place apples in a baking tin, pour over the orange juice and cover with foil. Bake 40 minutes.
    5. Remove the foil and bake a further 20 minutes until soft but not mushy. Let cool a few minutes before serving.
