Pikelets / Griddle Cakes

    This is a nice easy recipe, cooked on a griddle or in a frypan. Just throw everything into a bowl and mix. Served hot or cold with jam and cream or any topping you like. We like them with lemon curd and Nutella and banana as well. This recipe makes around 48. Great for functions.

    Makes: 48 pikelets

    • 3 cups self raising flour
    • 4 1/2 cups milk
    • 1 egg
    • 2 tablespoons sugar
    • 1 teaspoon salt

    1. In a large bowl, with an electric mixer, beat all ingredients together until smooth. It should be the consistency of thickened cream. Add more milk if needed. Transfer to a jug. This makes it much easier to pour on to griddle or pan.
    2. Heat a griddle or frypan on medium heat. Lightly spray pan/griddle with cooking oil or rub with butter.
    3. Pour about a tablespoon or so of mix onto griddle, repeating until full, but leaving enough room to be able to flip them.
    4. When bubbles form on top of mix, flip over and cook other side. If cooking too fast, adjust heat. Should be evenly browned.
    5. If mixture sits too long it becomes thick, so add a little more milk again if needed.
    6. Cool (or serve hot if liked. Yummy either way). Serve with jam and cream. Good just with butter as well. Will keep 24 hours in an airtight container.
