Easy Sweet and Sour Pork Chops

    This sweet and sour pork recipe is no trouble at all. The sauce is simply made with apricot jam, soy and ginger.

    Serves: 4 

    • 1 tablespoon sesame oil
    • 4 boneless pork chops
    • salt and pepper, to taste
    • 1 cup apricot jam
    • 2 tablespoons soy sauce
    • 1 teaspoon minced fresh ginger
    • 1/4 cup spring onions, sliced

    1. Heat the sesame oil in a frypan over medium high heat. Season pork chops on both sides with salt and pepper and brown them, about 2 minutes a side.
    2. Stir in the apricot jam, soy sauce and ginger and bring to a simmer. Reduce heat to low, cover pan and cook 5 minutes or until pork is cooked through. Stir in spring onions and serve.
