Greek Prawn Pasta Salad

    Not sure if this salad is traditionally Greek but it is full of the bright flavours of a Greek salad like mint and feta.

    Ingredients
    Serves: 4 

    • 300g penne pasta
    • 1 tablespoon olive oil
    • 1 green capsicum, seeded and diced
    • 2 cloves garlic, finely diced
    • 600g green prawns, peeled and deveined
    • 1 teaspoon oregano
    • 1/2 cup chicken stock
    • 1/4 cup fresh mint, chopped
    • 1 tablespoon red wine vinegar
    • 1 teaspoon Dijon mustard
    • 1/2 teaspoon thyme
    • salt and pepper, to taste
    • 1/2 cup feta, crumbled

    Directions
    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Cook the pasta in boiling salted water 11 minutes or until al dente. Drain and place in a bowl.
    2. Heat the oil in a frypan and fry the capsicum and garlic for 1 minute. Add the prawns and oregano and cook until the prawns are pink, about 3 minutes. Add to the pasta.
    3. In a bowl, whisk together the stock, mint, vinegar, mustard, thyme, salt and pepper. Toss the dressing with the pasta then top with feta and serve.
