Tequila Chicken Kebabs

You'll be surprised at the difference a tequila glaze makes to standard chicken kebabs. Serve with vinaigrette for dipping.

Serves: 4 

  • 2 chicken breast halves, cut into large cubes
  • 1 red capsicum, cut into 5cm pieces
  • 1 green capsicum, cut into 5cm pieces
  • 1 yellow capsicum, cut into 5cm pieces
  • 1 red onion, cut into wedges
  • 2 tablespoon olive oil
  • 1/4 cup tequila
  • salt and pepper, to taste

Preparation:30min  ›  Cook:15min  ›  Ready in:45min 

  1. Soak bamboo skewers at least 20 minutes so they don't burn.
  2. Alternate pieces of chicken with different coloured capsicums on the skewers. Rub lightly with olive oil then brush with tequila. Sprinkle with salt and pepper.
  3. Preheat the grill and place the skewers on a baking sheet. Grill 15 minutes or until chicken is done, turning frequently and basting with more tequila.
