Chicken and Mushroom Cacciatore

    The secret ingredient in this chicken cacciatore is curry powder which gives it a mildly spicy taste. Great with rice or bread.

    Serves: 4 

    • 2 tablespoon olive oil
    • 1 onion, diced
    • 1 green capsicum, seeded and diced
    • 2 cups mushrooms, sliced
    • 3 cloves garlic, finely diced
    • 2 teaspoons basil
    • 2 teaspoons curry powder
    • 2 bay leaves
    • salt and pepper, to taste
    • 2 (400g) tins diced tomatoes
    • 2 cups chicken stock
    • 600g chicken breast, cut into cubes

    1. Heat 1 tablespoon of the oil in a large saucepan. Add onion, capsicum, mushrooms and garlic and cook until the onion has softened, about 5 minutes.
    2. Add the basil, curry powder, bay leaves, salt and pepper and cook 1 more minute.
    3. Add tomatoes and stock, loosely cover and simmer 20 minutes.
    4. Heat the remaining tablespoon oil in a saucepan over medium high heat. Brown the chicken on all sides, about 5 minutes. Add the chicken to the cacciatore sauce and simmer 10 more minutes until chicken is cooked through.
