Thai Chicken Salad

    Whenever I roast a chicken I always have leftovers and this is one of my favourite ways to use them up.

    Serves: 4 

    • 2 cups leftover roast chicken, shredded
    • 1/3 cup mayonnaise
    • 2 tablespoons peanut butter
    • 1 tablespoon soy sauce
    • 1 tablespoon lime juice
    • 2 teaspoons sesame oil
    • 1 red capsicum, cut into strips
    • 1/4 cup green onions, sliced
    • salt and pepper, to taste
    • 1 small cos lettuce, chopped
    • 1/4 cup roasted peanuts

    1. In a large bowl, combine mayonnaise, peanut butter, soy sauce, lime juice and sesame oil and beat well with a fork. Add the chicken and toss to coat evenly.
    2. Add the capsicum and green onions and stir. Season with salt and pepper if necessary.
    3. Divide the lettuce between four bowls and top with the chicken mixture. Sprinkle with peanuts and serve.
