Perfect Roast Herbed Chicken

This is my go-to roast chicken recipe when I want something simple that works well. It's a simple roast with a coating of dried herbs.

Serves: 4 

  • 1 (2kg) whole chicken
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 2 medium onions, sliced
  • 1/2 cup chicken stock

  1. Preheat oven to 230 degrees C.
  2. Rub the chicken with the olive oil then salt inside and out. Rub the skin with pepper, rosemary and thyme.
  3. Slice the onions and use to layer the bottom of a roasting tin. Pour in the chicken stock and place the chook on top of the onions.
  4. Place the chicken in the oven and immediately reduce heat to 160 degrees C. Roast 1 1/2 hours, basting every 30 minutes. Let rest 10 minutes before carving.
