    I'm a big fan of tinned tomato soup for lunch and I've found you can really make a special meal with just a couple more ingredients, roasted tomatoes and garlic.

    Serves: 2 

    • 1 (420g) tin tomato soup
    • 2 roma tomatoes
    • 1 teaspoon olive oil
    • 1 clove garlic, minced
    • 1/2 teaspoon freshly ground black pepper
    • coriander leaves, to garnish

    1. Put the oven at 180 degrees C. Cut a slit in each of the tomatoes (so they don't burst) and rub them with the olive oil. Place in a baking tin and roast 50 minutes. Let cool then roughly chop.
    2. Place the tinned soup in a saucepan and start heating it. Add the chopped roasted tomatoes, the garlic and pepper. Heat over low heat, not quite boiling, for 20 minutes, stirring occasionally.
    3. Serve, sprinkled with coriander leaves.
