Tinned Tuna Burgers

    A lovely lighter change from beef burgers, and simple to make because you can keep all the ingredients in the cupboard.

    Serves: 4 

    • 3 (185g) tins tuna in water, drained well
    • 1/3 cup mayonnaise
    • 3 tablespoons breadcrumbs
    • 2 tablespoons fresh parsley, chopped
    • 1 teaspoon mustard
    • 1 teaspoon Tabasco sauce (optional)
    • salt and pepper, to taste
    • olive oil, for frying
    • 4 hamburger buns

    1. In a mixing bowl combine tuna, mayonnaise, breadcrumbs, parsley, mustard, Tabasco and salt and pepper. Mix well and shape into 4 thick patties.
    2. Heat oil in a frypan and fry burgers 5 minutes a side until browned and heated through. Serve on buns with all the usual condiments!
