Marshmallow and Raspberry Chocolate Sandwich

    Little marshmallows sandwiched in between chocolate ripple biscuits and iced with chocolate.

    Makes: 7 sandwich biscuits

    • 1 packet chocolate ripple biscuits
    • 1 packet mini marshmallow (pink and white)
    • 100g cooking chocolate
    • raspberry jam, as needed

    Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

    1. Preheat oven to 170 degrees C.
    2. Place half the packet of chocolate ripple biscuits on a baking tray, flat side up.
    3. Place 8 mini marshmallows on each biscuit.
    4. Place in oven for 5 minutes or until marshmallows are soft.
    5. Spread 3/4 teaspoon raspberry jam on the rest of the biscuits and quickly cover each marshmallow biscuit, creating a sandwich.
    6. Melt chocolate in a heatproof bowl over a pot of boiling water, stirring till smooth.
    7. Spoon chocolate over top of marshmallow sandwiches and allow to set.
