Steamed Hot and Sour Chicken

    This is a Chinese method of steaming chicken simply and then serving with a flavourful dressing. Perfect in summer as it is served room temperature.

    Serves: 4 

    • 2 tablespoons fresh coriander, chopped
    • 5cm ginger, cut into strips
    • 2 tablespoons sliced spring onions
    • 2 cloves garlic, finely diced
    • 1 red chilli, sliced
    • 2 tablespoons soy sauce
    • 1 tablespoon rice vinegar
    • 1 teaspoon brown sugar
    • 1 teaspoon sesame oil
    • 2 tablespoons peanut oil
    • 400g boneless, skinless chicken thigh fillets

    1. Combine all ingredients except chicken thighs and peanut oil in a heatproof bowl.
    2. Heat the peanut oil in a saucepan until the surface starts to shimmer then pour over the ingredients in the bowl. Stir to combine and set aside.
    3. Place the chicken on a plate that fits inside a steamer basket. Steam, covered, about 14 minutes or until tender. Remove chicken from steamer and let rest 5 minutes.
    4. Cut chicken into 1cm slices and arrange on a platter. Spoon over the dressing.
