A very quick Asian style fish noodle soup, absolutely bursting with flavour from chilli, lemongrass, ginger and lime.

Serves: 4 

  • 6 cups vegetable stock
  • 1 red chilli, split lengthways
  • 1/2 stem lemongrass, smashed
  • 1 teaspoon fresh ginger, grated
  • 150g rice noodles
  • 2 salmon or other fish fillets, skin removed and cut into cubes
  • 4 spring onions, sliced
  • soy sauce and lime juice, to taste
  • coriander leaves, to garnish

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Bring the stock to boil in a saucepan. Add chilli, lemongrass and ginger and simmer 10 minutes. Add rice noodles and simmer 5 minutes.
  2. Add fish chunks and spring onions and simmer 5 minutes until fish is cooked. Season with soy and lime juice.
  3. Serve garnished with coriander leaves.
