Salmon Crusted with Coriander

    A simple coating for salmon fillets that uses fresh coriander. I like to serve this with mashed potatoes and a drizzle of balsamic vinegar.

    Serves: 4 

    • 4 salmon fillets, about 180g each
    • 1 bunch fresh coriander
    • 100g pine nuts
    • 3 cloves garlic
    • olive oil, as needed
    • breadcrumbs, as needed

    1. Preheat oven to 200 degrees C.
    2. In a food processor, combine coriander, pine nuts and garlic. Whizz to chop then drizzle in enough olive oil to make a thin paste. Mix in breadcrumbs until paste is thick enough to coat fish.
    3. Pat the coating on the salmon fillets and place on a baking tray. Bake 10 minutes then take out and place under the grill until the crust is golden.
