    My mum used to make this minestrone when I was a kid and it was perfect even for a kid who didn't like vegetables!

    Ingredients
    Serves: 6 

    • 2 tablespoons olive oil
    • 3 rashers bacon, diced
    • 2 onions, diced
    • 1 leek, sliced
    • 1 carrot, diced
    • 2 stalks celery, diced
    • 1 clove garlic, crushed
    • 2 zucchini, diced
    • 1 (400g) tin crushed tomatoes
    • 6 cups chicken stock
    • 2 cups water
    • 2 cups spinach, shredded
    • 1 (400g) tin cannellini beans, drained
    • 2 tablespoons parsley, chopped
    • 120g small pasta, e.g. orzo
    • salt and pepper, to taste
    • parmesan cheese, to garnish

    Directions
    Preparation:15min  ›  Cook:1hour10min  ›  Ready in:1hour25min 

    1. Heat oil in a large saucepan over low heat. Add bacon and cook 2 minutes. Add onion, leek, carrot, celery and garlic and cook until softened, about 8 minutes.
    2. Add zucchini and tomatoes and cook 2 minutes. Add chicken stock and water and bring to a boil. Reduce heat and simmer 30 minutes. Add spinach and simmer 20 more minutes.
    3. Add beans and parsley and any extra water if needed, but don't make it too thin. Add pasta and cook 10 more minutes then season with salt and pepper.
    4. When pasta is cooked, serve sprinkled with parmesan cheese.
