    Kofta is a meatball popular in India and the Middle East. It's full of flavour from a mixture of spices and lemon.

    Makes: 12 skewers

    • 750g minced lamb
    • 1 onion, finely diced
    • 2 cloves garlic, crushed
    • 1/4 teaspoon ground cloves
    • 1/4 teaspoon nutmeg
    • 1/4 teaspoon paprika
    • 1/2 teaspoon cumin
    • 1/2 teaspoon ground coriander
    • 1 teaspoon lemon zest
    • 1/4 cup pine nuts, diced
    • 1/2 cup fresh parsley, chopped

    1. In a bowl, combine lamb, onion, garlic, spices and lemon zest. Mix well.
    2. Stir in the pine nuts and parsley and mix well. Refrigerate 30 minutes. Meanwhile, soak bamboo skewers.
    3. Roll tablespoons of the mixture into ovals. Thread three ovals on each skewer.
    4. Cook the kofta under the grill until brown and cooked through.
