Marinated Tuna Kebabs

As a change from lamb or chicken kebabs try these marinated tuna beauties. Don't forget to soak the skewers before cooking.

Makes: 8 kebabs

  • 1 kg fresh tuna
  • 1/2 cup parsley sprigs
  • 1/2 cup coriander leaves
  • 3 cloves garlic, smashed
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • 1 teaspoon sweet paprika
  • 1 teaspoon coriander
  • 1/2 cup lemon juice
  • 1/4 cup olive oil
  • 1 teaspoon lemon zest

Preparation:15min  ›  Cook:10min  ›  Extra time:8hours marinating  ›  Ready in:8hours25min 

  1. Cut tuna into large cubes.
  2. Place all remaining ingredients in a food processor and blend until smooth. Pour over the tuna pieces in a bowl, mix well and refrigerate, covered, overnight.
  3. Thread tuna pieces onto skewers. Cook on the barbecue or under the grill, turning once while cooking.
