Baba ganoush is easy to make and miles better than the store bought kind. It will keep about 2 days in the fridge.

Makes: 2 cups baba ganoush

  • 2 large eggplants
  • 1/4 cup plain yoghurt
  • 2 tablespoons lemon juice
  • 1 clove garlic, crushed
  • 1/4 cup tahini
  • 2 teaspoons cumin
  • 1/3 cup fresh coriander

Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

  1. Prick eggplants all over with a skewer to prevent them bursting and place on an oven tray. Bake uncovered in a hot oven 1 hour, or until soft. Let cool
  2. Peel the eggplants and roughly chop the flesh. Place the flesh in a food processor with the rest of the ingredients and blend until combined.
