Chicken Satay, Quick and Easy

    This is the easiest satay you will ever make, and the taste is sensational. This will serve approximately 6 people.

    Serves: 6 

    • 1 1/2 kg chicken breasts
    • 1 - 1 1/2 cans coconut cream (we like lots of sauce; take the 1/2 away if preferred)
    • 4 heaped tablespoons peanut butter
    • 2 chicken stock cubes
    • 1 1/2 cups sweet chilli sauce
    • salt and pepper, to taste

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Trim and slice chicken breasts.
    2. Spray a large deep frypan with cooking spray and lightly cook the chicken until just changed colour.
    3. Add coconut cream, peanut butter and crumbled stock cubes, stirring until incorporated.
    4. Add chilli sauce and salt and pepper.
    5. Simmer for 10 minutes or until chicken is cooked through.
    6. Serve with rice.
