Spicy Fried Cashew Chicken Thighs

    So easy to make and so good! You will need to marinate the chicken overnight but then it just takes a few minutes to cook.

    Serves: 4 

    • 2 cloves garlic, crushed
    • 1 tablespoon fresh ginger, grated
    • 2 teaspoon ground cardamom
    • 1 teaspoon nutmeg
    • 1 red chilli, finely diced
    • 2 tablespoons lemon juice
    • 1 1/2 kg chicken thigh cutlets
    • 2 tablespoons oil
    • 1/2 roasted unsalted cashews
    • 1/4 cup water

    1. In a bowl, combine garlic, ginger, cardamom, nutmeg, chilli and juice. Mix well.
    2. Add chicken to spice mixture, stir and marinate overnight.
    3. Heat oil in a large frying pan and fry chicken thighs over medium heat 5 minutes or until browned.
    4. Add cashews and water, cover and simmer 10 minutes or until chicken is tender.
