Easy Chocolate Hazelnut Cake

    Freshly grated chocolate and ground hazelnut make this easy cake fabulously rich. You could also make this cake with ground almonds, if you prefer.

    Makes: 1 cake

    • 200g butter
    • 180g caster sugar
    • 4 eggs
    • pinch salt
    • 150g plain flour
    • 1 teaspoon baking powder
    • 125g ground hazelnuts
    • 100g cooking chocolate, grated
    • 1 teaspoon cinnamon
    • icing sugar, for dusting

    1. Preheat the oven to 180 degrees C and grease a 23cm square cake tin.
    2. Cream the butter until light and fluffy. Beat in the caster sugar. Add the eggs one at a time, beating well after each addition. Finally, beat in the salt.
    3. Sift in the flour and baking powder and mix. Add the ground hazelnuts, grated chocolate and cinnamon and fold together until just mixed. Pour into cake tin and smooth the top with a spatula.
    4. Bake 50 minutes, or until a skewer tests clean. Let cool slightly, then turn out of the tin onto a serving plate. Dust with icing sugar and let cool.
