In a shallow dish or pan, soak 20 wooden skewers in water at least 20 minutes.
Combine all the marinade ingredients in a bowl. Add the chicken strips and mix well. Let marinate at least 15 minutes.
While the chicken is marinating, make the peanut sauce. Heat the oil in a frypan over medium-high heat then add the garlic and onion. Cook until softened, about 4 minutes. Add soy sauce, sugar, peanut butter and 1 cup water. Simmer 5 minutes, or until thickened to your desired consistency. Add lemon juice and remove from heat.
Preheat the barbecue to high heat. Thread the chicken strips onto skewers, one strip per skewer. Barbecue skewers 10 minutes, turning once during cooking.
Serve immediately with the peanut sauce for dipping.
