    This is a sweet loaf, great for breakfast or after dinner with a coffee.

    Ingredients
    Makes: 2 loaves

    • 1 kg pumpkin, cooked and mashed (I cook mine with the skin on in the microwave for about 5 minutes then scoop the pumpkin out with a spoon)
    • 1 cup plain flour
    • 2 cups self raising flour
    • 1 cup canola oil
    • 1 1/2 cups sugar
    • 4 eggs, beaten
    • 2 tablespoons cinnamon
    • 2 teaspoons vanilla essence
    • pinch salt

    Directions

    1. Preheat oven to 180 degrees C. Grease and line bottom of 1 large or 2 standard loaf tins.
    2. In a large bowl, combine pumpkin and oil. Add in eggs and vanilla, mixing well.
    3. Add in sugar, cinnamon and salt, mixing well.
    4. Add flour and mix until just combined.
    5. Pour mixture into tin(s).
    6. Bake for 1 hour or until a skewer comes out clean. If making a large loaf it could take more than an hour. If browning too much before cooked, cover with aluminium foil.

    Tip

    You can also use this to make banana bread by substituting 8 medium mashed bananas for the pumpkin.
