Beefy Beef Bolognese

    This is a meaty, rich, bolognese-style dish which is a great filling meal for cold winter nights. Serve with spaghetti or, for a low-carb meal, replace pasta with steamed, julienned vegetables such as zucchini, carrot and parsnip.

    Serves: 4 

    • 2 tablespoons olive oil
    • 1 white onion, diced
    • 500g premium beef mince
    • 1 (290g) tin of tomato puree
    • 1 1/2 cups water
    • 2 beef stock cubes, crumbled
    • 1/2 teaspoon oregano
    • 1/2 teaspoon thyme
    • 1 teaspoon curry powder
    • 1 teaspoon soy sauce
    • 1 (300g) tin red kidney beans (optional)
    • 1/2 teaspoon Marmite or Vegemite (optional)
    • 1 (400g) tin diced tomatoes in tomato juice
    • 1 tablespoon minced garlic

    1. Heat olive oil in a large pot on medium heat. Add diced onion to the pot and heat until brown, approx 5 mins. Add beef mince and cook until all meat is brown.
    2. Add tomato puree, water, stock cubes, oregano, thyme, curry powder, soy sauce, red kidney beans, Marmite, diced tomatoes and garlic. Stir well.
    3. Simmer for 1 and a half hours, stirring and adding water occasionally if the bolognese becomes dry.
