Pipis in XO Sauce

    Another lovely take on Pipis in XO sauce, fast and quick for an easy weeknight meal.

    Serves: 4 

    • 2 tablespoons peanut oil
    • 4 eschalots, peeled, finely diced
    • 1.2 kg Pipis
    • 1/2 cup XO sauce
    • 1 cup chicken stock
    • 1/2 cup Chinese Shaoxing rice wine
    • 2 tablespoons oyster sauce
    • fresh green chillies, sliced
    • 2 limes, juiced
    • steamed rice, to serve

    1. Heat peanut oil in a wok over a high heat, then stir-fry eschalots for 2 minutes or until softened.
    2. Add Pipis and cook for 3 minutes or until most shells are opened.
    3. Add XO sauce, stock, rice wine, oyster sauce, chilli and lime juice. Simmer for 3 minutes.
    4. Serve with steamed rice.
