Sachet d'épices (Spice Bag)

    Neater and easier than a bouquet garni, use a sachet d'épices to add extra flavour to soups, stocks and stews.

    Makes: 1 spice bag

    • 1 square muslin or cheesecloth
    • stems from one small bunch parsley
    • 1 bay leaf
    • 10 black peppercorns
    • 1 whole clove
    • 3-4 sprigs fresh dill
    • kitchen string

    1. Lay out the muslin or cheesecloth on a work surface. Place all the herbs and spices in the middle and twist up the corners to make a bag. Secure with kitchen string and use at once.
