Garlic Eggplant Curry

Even people who are not a big fan of eggplants will like this slow cooked eggplant curry. You can adjust the salt to your taste, I like it salty.

Serves: 4 

  • 3 eggplants, cut into cubes
  • 2 onions, diced
  • 10cm fresh ginger, finely diced
  • 12 cloves garlic, finely diced
  • 6 Thai chillies, diced
  • 1 tablespoon cumin seeds
  • 1 tablespoon chilli powder
  • 1 tablespoon salt
  • 1 teaspoon turmeric
  • 1/4 cup vegetable oil

Preparation:20min  ›  Cook:5hours  ›  Ready in:5hours20min 

  1. Combine all the ingredients in the slow cooker and mix well. Cook on low 5 hours. If the eggplants starts to dry out, add a little more oil.
  2. Serve with rice and/or roti bread.
