Healthy Beetroot Salad

    A quick and easy, but very healthy and nutritious beetroot and carrot salad. It uses few ingreadients, and almost no time, but the result will be satisfactory to your health and your taste buds.

    • 2 medium beetroots
    • 2-3 medium carrots
    • 2 cloves garlic
    • 3 tablespoons olive oil
    • juice of 1/2 lemon
    • salt, to taste
    • parsley, to garnish

    1. You will need raw beetroot for this salad, which will preserve all the lovely nutrients it has. The only relatively time-consuming step of the preparation is you need to shred the beetroot and carrots. Afterwards you just mix them together in a bowl.
    2. To prepare the dressing smash the garlic cloves, then add 3 tablespoons of olive oil, the juice of half a lemon and some salt to taste. Top the salad with some chopped parsley leaves. And that's it - you have a delicious and health-boosting salad on your hands. For additional taste-buds kick, you can add some chopped walnuts.
