Proper aromatic rice like you would get in a restaurant isn't hard to make in your kitchen. This is a great side dish to curry or palak paneer.

Serves: 4 

  • 1 tablespoon ghee
  • 2 small onions, sliced thinly
  • 3 cloves garlic, crushed
  • 3 teaspoons cumin seeds
  • 2 teaspoons black mustard seeds
  • 4 cardamom pods
  • 2 bay leaves
  • 1/2 cup shelled pistachios
  • 1 1/2 cups basmati rice, rinsed and drained
  • 2 3/4 cups chicken stock

Preparation:20min  ›  Cook:15min  ›  Ready in:35min 

  1. Heat the ghee in a heavy saucepan. Cook the onions, garlic, spices and nuts for 5 minutes until onions are lightly browned.
  2. Add the rice and stock and stir well. Simmer, covered, 15 minutes. Remove from heat and let stand 10 minutes before serving.
