Chicken Masala Drumsticks

    Chicken drumsticks with a homemade masala spice paste of Indian flavours. Cook on the barbecue or fry them on a griddle pan.

    • 2 teaspoons coriander seeds
    • 2 teaspoons cumin seeds
    • 1/2 teaspoon cardamom seeds
    • 1/2 teaspoon hot chilli powder
    • 1/2 teaspoon black pepper
    • 1/4 teaspoon ground cinnamon
    • 1/4 teaspoon ground cloves
    • 1 tablespoon vegetable oil
    • 1 tablespoon water
    • 8 chicken drumsticks

    1. In a spice grinder, grind the coriander seeds, cumin seeds and cardamom seeds. You can also do this in a mortar and pestle.
    2. Heat a dry frying pan and add the crushed seeds with the chilli powder, pepper, cinnamon and cloves. Stir until fragrant. Remove from heat and mix with the oil and water to make a paste.
    3. Cut each drumstick through the thickest part to the bone two or three times on both sides of the drumstick. Rub the spice paste all over the drumsticks, cover and refrigerate at least 6 hours.
    4. Cook on the barbecue or an oiled griddle pan until brown and cooked through.
