Prawn and Green Mango Curry

    This prawn curry is a spectacular use for unripe mangoes. It's very simple to make even including the spice mix. Serve over white rice.

    Serves: 4 

    • 1 1/2 kg raw king prawns, shelled and deveined
    • 2 tablespoons oil
    • 1 onion, finely diced
    • 2 green mangoes, peeled and sliced
    • 8 curry leaves
    • 1/4 cup coconut milk powder
    • 2 cups boiling water
    • 1/3 cup cream
    • Spice mix
    • 1/2 cup desiccated coconut, toasted
    • 2 cloves garlic, diced
    • 1/2 teaspoon ground turmeric
    • 2 teaspoons ground coriander
    • 3 dried red chillies, diced
    • 1 teaspoon salt

    1. Heat oil in a large saucepan and cook the onion until lightly browned.
    2. Make the spice mix: combine all ingredients in a food processor or spice grinder and grind to a powder. Add to the onions and cook until fragrant.
    3. Add the prawns, mangoes, curry leaves. Mix the coconut milk powder into the boiling water and add to the curry. Simmer 5 minutes, until prawns are just done. Remove from heat and stir in the cream.
