Prawn Masala

    Coriander gives this prawn masala curry an attractive green colour. If you like things a little spicier try upping the chilli and ginger a bit.

    Ingredients
    Serves: 4 

    • 1 1/2 kg uncooked (green) prawns, shelled, tails left on
    • 2 tablespoons oil
    • 1 onion, sliced
    • 2/3 cup coriander leaves
    • 1/3 cup mint leaves
    • 2 tablespoons water
    • 2 teaspoons sesame oil
    • 2 cloves garlic, diced
    • 1 tablespoon ginger, diced
    • 2 tablespoons white vinegar
    • 1 teaspoon turmeric
    • 1 teaspoon cumin
    • 1 teaspoon chilli powder
    • 1 teaspoon ground fennel
    • 1/2 teaspoon ground cardamom
    • 1 teaspoon salt

    1. Heat the oil in a large saucepan and cook the onion, stirring, until slightly browned.
    2. Place all remaining ingredients except the prawns in a food processor and process into a puree.
    3. Add the masala puree to the saucepan and cook, stirring, until fragrant. Stir in the prawns and cook five minutes until just done.
