    Cauliflower, green peas and potatoes are a classic curry combination in Northern India. It is very filling and warming and good for you too!

    Ingredients
    Serves: 4 

    • 2 tablespoons ghee
    • 1 large onion, sliced
    • 2 cloves garlic, crushed
    • 1 tablespoon sweet paprika
    • 2 teaspoons garam masala
    • 2 teaspoons ground cumin
    • 6 cardamom pods
    • 4 cloves
    • 8 curry leaves
    • 1/3 cup shredded coconut
    • 1/2 cup water
    • 1 (400ml) tin coconut milk
    • 2 teaspoons salt
    • 4 medium potatoes, quartered
    • 1 small cauliflower, cut into florets
    • 1 cup frozen peas

    Directions

    1. Heat the ghee in a saucepan and saute the onions and garlic until onion is just browning.
    2. Add all the spices and cook until fragrant, stirring constantly. Add curry leaves, coconut, water, coconut milk, salt and potatoes. Simmer, covered, 15 minutes.
    3. Add cauliflower and simmer 10 more minutes. Stir in peas and simmer 3 more minutes or until peas are heated through.
