    Onion gravy is the traditional sauce for bangers and mash or toad in the hole. This one has mustard and red wine.

    Ingredients
    Serves: 4 

    • 90g butter
    • 3 medium onions, thinly sliced
    • 1 tablespoon plain flour
    • 100ml red wine
    • 400ml chicken or beef stock
    • 1 teaspoons Worcestershire sauce
    • 2 teaspoons mustard
    • salt and black pepper

    1. Melt the butter in a heavy pan and cook the onion for 10 minutes until soft, then turn the heat down low, cover the pan and cook until the onions are brown; about 30 minutes.
    2. Stir in the flour and cook for a minute then add the wine, stock, Worcestershire sauce and mustard.
    3. Bring the gravy to the boil and simmer for around 15 minutes stirring frequently.
    4. Adjust seasoning to taste and serve.

    Made it twice now (Yum) with bangers and mash - wife loves it too - have frozen some but yet to see how it turns out. - 10 Aug 2012
