This marinated prawns recipe is a classic Thai snack. You can cook them on the barbecue or under the grill, whichever you prefer.
16 large green prawns, peeled and deveined
1 clove garlic, finely diced
1 teaspoon turmeric
1 coriander root, finely diced
1 teaspoon sugar
1 tablespoon oil
- Soak 16 small bamboo skewers in water for 20 minutes.
- Place prawns in a bowl and sprinkle with the garlic, turmeric, coriander root, salt, sugar and oil. Mix with your hands so the prawns are coated. Let marinate in the fridge at least 20 minutes.
- Thread each prawn on a skewer down its length. Cook under a very hot grill 2 minutes a side.
