Bacon Mac and Cheese

    This is a simple mac and cheese recipe that I like to use as a side dish. I am not a big fan of this dish when it is simply macaroni with cheese melted over it so this one uses a cheese sauce.

    Serves: 8 

    • 250g smoked bacon, finely diced
    • 1 small brown onion, finely diced
    • 1 litre full cream milk
    • 3 tablespoons cornflour
    • 150g smoked cheddar, grated
    • 200g cheddar (tasty or American style), grated
    • 2 cups boiled macaroni
    • 3 tablespoons breadcrumbs
    • herb rub (Dances with Smoke brand if available)
    • paprika, to taste

    1. In a medium saucepan saute the bacon and onion until the bacon is cooked through and the onion is transparent.
    2. Add most of the milk to the saucepan and let slowly come to the boil. Mix the remaining milk with the cornflour. Just before the milk boils stir in the cornflour mixture and continue stirring.
    3. Add the two cheeses to the white sauce while continuing to stir until melted. Add the cooked macaroni and stir until the sauce well coats the pasta.
    4. Place spoonfuls of mac and cheese into ramekins then sprinkle with breadcrumbs, herb rub and paprika. Place in the oven at 180 degrees C or place under a grill until the top melts and a crust is formed.
