Simple Bolognaise Sauce

    Simple, healthy sauce that you can prepare for mixing with your cooked pasta. Very nice.

    Serves: 4 

    • 2 tablespoons olive oil
    • 1 strip of bacon, cut into small pieces (optional)
    • 1 carrot, finely diced
    • 1 celery stalk, finely diced
    • 1 onion, finely chopped
    • 2 cloves of garlic, finely chopped or crushed
    • 500g minced beef
    • 1 1/2 cups chicken or vegetable stock (beef can be used too)
    • 1/2 cup tomato paste
    • salt and pepper, to taste
    • 30ml red wine (optional)

    1. Heat oil in a heavy based pot. Add the bacon, carrot, celery, onion and garlic and cook until wilted. Add the meat.
    2. Brown while stirring to break up the clumps. Mix in the stock and bring to a boil. Add the tomato paste, stir well and cover the pot.
    3. Cook over low heat about 30 minutes, remove the lid and cook for another 10 minutes until you have a thick, rich sauce.
    4. Sprinkle with salt and pepper to taste, and stir in the optional wine.


    This recipe serves 4 but can stretch to 6. Keeps for five days or freeze. You can leave out the bacon if you wish. If you want mushrooms, add them in the last 10 minutes of cooking.
