Russian Beef Baked in Milk

    Baking a beef joint in milk and cream is a Russian technique that makes tougher cuts of meat meltingly tender.

    Serves: 8 

    • 1 kg beef joint, e.g. rump or chuck
    • 1 onion, thinly sliced
    • salt and pepper, to taste
    • 1/2 cup (125ml) double cream
    • 1/2 cup (125ml) milk
    • 150g grated cheese, e.g. gouda

    Preparation:15min  ›  Cook:1hour30min  ›  Ready in:1hour45min 

    1. Preheat the oven to 180 degrees C.
    2. Slice the beef into 1cm - 1 1/2cm thick slices and lay in a single layer in an ovenproof dish. Top with onion, salt and pepper. Combine the milk and cream and pour evenly over the beef. Top with grated cheese.
    3. Bake 1 1/2 hours. Enjoy!
