    Easy fish cakes made out of smoked cod and mashed potatoes. You can use leftover mashed potatoes if you like - they will still be delicious!

    Ingredients
    Serves: 4 

    • 1 cup smoked cod, shredded
    • 1 cup mashed potatoes
    • 1/4 cup Cheddar cheese, finely diced
    • 2 cloves garlic, finely diced
    • 1 tablespoon Dijon mustard
    • 1/2 cup fresh basil, finely chopped
    • 1 cup bread crumbs
    • oil, for frying

    Directions

    1. Preheat oven to 190 degrees C.
    2. In a bowl, combine smoked cod, potatoes, cheese, garlic, mustard and basil. Form into 8 patties.
    3. Press the patties into bread crumbs to coat.
    4. Heat a thin layer of oil in a heavy frypan. Quickly brown the patties on both sides. Place on a baking tray and bake 10 minutes until heated through.
