Creamy Lemon Butter

    A delicious lemon butter spread that is divine on shortbread or other biscuits! It will keep a week but you will eat it before then.

    Makes: 2 cups lemon butter

    • 200ml fresh lemon juice
    • 100g salted butter
    • 3 eggs
    • 100g caster sugar

    Preparation:5min  ›  Cook:5min  ›  Ready in:10min 

    1. Place all the ingredients in a saucepan and bring to a simmer over medium heat while whisking. The mixture will thicken after about 5 minutes.
    2. Remove from heat and let cool to room temperature before transferring to jars. Store in the refrigerator.

    There's no sugar - soooo tart. So added about 100gms. Sieved it too to get rid of eggy bits. It's ok, not sure I'd make it again.  -  12 Aug 2015  (Review from Allrecipes UK & Ireland)
