    A delicious lemon butter spread that is divine on shortbread or other biscuits! It will keep a week but you will eat it before then.

    Ingredients
    Makes: 2 cups lemon butter

    • 200ml fresh lemon juice
    • 100g salted butter
    • 3 eggs
    • 100g caster sugar

    Directions
    Preparation:5min  ›  Cook:5min  ›  Ready in:10min 

    1. Place all the ingredients in a saucepan and bring to a simmer over medium heat while whisking. The mixture will thicken after about 5 minutes.
    2. Remove from heat and let cool to room temperature before transferring to jars. Store in the refrigerator.
