Serve this shredded beef brisket on toast, or else roll it in tortillas. Avocado slices go very well with this. It's simple to make but takes a while to cook.


Serves: 12 

  • 1 kg beef brisket
  • 4 cloves garlic
  • 2 bay leaves
  • 1 onion, whole
  • 1 kg tomatoes
  • 3 tablespoons oil
  • 4 onions, sliced
  • salt and pepper, to taste

  1. Place beef, whole onion, garlic and bay leaves in a saucepan and cover with water. Bring to a simmer and cook 90 minutes or until beef is tender.
  2. Meanwhile, fry the tomatoes in a hot frypan until they begin to open and burn a little, 10-15 minutes. Place in a blender and puree. Set aside.
  3. Heat the oil in a frypan and cook the sliced onions about 5 minutes, until softened. Add tomato puree and simmer until slightly thickened.
  4. Drain the brisket and shred. Add to the frypan and season with salt and pepper to taste.
