Spread this eggplant dip on bread or serve it with crackers at a party. This recipe includes fresh mint which just makes it taste of summer.


Serves: 6 

  • 3 eggplants
  • 2 cloves garlic, crushed
  • 2 sprigs fresh mint, finely chopped
  • 3 tablespoons olive oil
  • pepper and salt, to taste

Preparation:5min  ›  Cook:30min  ›  Ready in:35min 

  1. Preheat oven to 200 degrees C.
  2. Prick the eggplants a few times with a fork and place on a baking tray. Bake 30 minutes. Let cool.
  3. Cut the eggplants in half and scoop out the flesh into a bowl. Mash well with a fork. Add the garlic and mint and stir, then add the olive oil and season to taste.
