Coriander seeds add a nice flavour to this easy eggplant dip. Serve it in a bowl, or dolloped on pita wedges as an appetiser.


Serves: 6 

  • 2 large eggplants
  • 10 coriander seeds, crushed
  • 2 cloves garlic, finely diced
  • 2 tablespoons olive oil
  • salt and pepper, to taste

Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

  1. Cut the eggplant into cubes without peeling and place in the pressure cooker with a little water. Cook 10 minutes.
  2. Once cool, mash the eggplant with a fork, adding all the remaining ingredients.
