Cooking eggplant in the microwave is really convenient! This eggplant dip is a nice appetiser served with pita bread or chips.


Makes: 1 bowl dip

  • 1 large eggplant
  • 1 onion shallot, very finely diced
  • salt and pepper, to taste
  • 1 teaspoon white wine vinegar
  • 1/2 cup olive oil

  1. Prick the eggplant all over with a fork and cook it in the microwave 10 minutes.
  2. Cut the eggplant in half lengthwise and scoop out the flesh. Mash well in a bowl with the shallot, salt and pepper, vinegar and olive oil. Let sit in the fridge overnight before serving.
