Grilled Crab Cakes

    I prefer slightly smaller crab cakes as they can be very rich. These are cooked under the grill instead of fried. Serve with melted butter.

    Makes: 8 crab cakes

    • 450g lump crabmeat
    • 1 cup mayonnaise
    • 1 egg white
    • 4 tablespoons very fine cracker crumbs
    • 1/2 cup fresh bread crumbs
    • 1 tablespoon butter

    1. Preheat the grill.
    2. Blend the mayonnaise, egg white and cracker crumbs in a mixing bowl. Add the crab and fold gently without breaking up the meat too much. Shape into 8 equal patties. Coat with breadcrumbs, pressing them into the surface.
    3. Melt the butter in a large frypan and place the crab cakes in. Turn to coat them with butter. Place under the grill and cook, turning once, about 5 minutes or until browned.
