Slow Cooker Indian Rice Pudding

An Indian rice pudding usually has cardamom and pistachios to add a lovely interesting flavour. The perfect end to an Indian meal.

Serves: 6 

  • 1 teaspoon vegetable oil
  • 1 cup basmatic rice, rinsed
  • 1/2 cup sugar
  • 1 teaspoon cardamom pods, crushed
  • 1/2 cup sultanas
  • 8 cups milk
  • 2 tablespoons pistachios, finely chopped

  1. Grease the slow cooker with the oil.
  2. Put the rice, sugar, cardamom, sultanas and milk in the slow cooker. Cook on High for 3 hours, stirring once or twice.
  3. Sprinkle pistachios on top and serve!
