    This is a Tunisian recipe for lamb shanks slow simmer with lots of vegetables and spices and served with raisin couscous.

    Ingredients
    Serves: 8 

    • 5 tablespoons olive oil
    • 2 lamb shanks
    • 1 cinnamon stick
    • 1 tablespoon ground ginger
    • 1 tablespoon ground coriander
    • 1 tablespoon paprika
    • 8 cloves garlic, diced
    • 2 onions, chopped
    • 3 large tomatoes, diced
    • 2 turnips, diced
    • 1 capsicum, diced
    • 1 bouquet garni
    • pinch saffron threads
    • 3 carrots, sliced
    • 3 stalks celery
    • 1 eggplant, diced
    • 2 zucchini, sliced
    • salt and pepper, to taste
    • 500g couscous
    • 100g sultanas

    Directions

    1. Season the shanks with salt and pepper. Heat 3 tablespoons olive oil in a heavy saucepan and brown shanks on all sides, about 5 minutes.
    2. Add cinnamon, coriander, paprika, ginger and half the saffron. Reduce heat and saute 5 minutes.
    3. Add garlic, onions, tomatoes, turnips and capsicum. Add the remaining oil and saute 5 minutes.
    4. Cover with water, about 1 1/2 - 2 litres. Add the bouquet garni, cover and simmer over low heat 2 hours.
    5. Add carrots, eggplant, chickpeas, remaining saffron and celery. Cover and simmer 30 minutes. Add zucchini and simmer 30 more minutes.
    6. Meanwhile, prepare the couscous according to the packet directions. Stir in the raisins.
    7. Serve the couscous and raisins in one bowl and the meat and vegetables in another.
