Mexican Rice in the Rice Cooker

    A lovely Mexican tomato rice with a dash of tequila. Use it to fill tacos and burritos or as a side dish at a Mexican meal.

    Serves: 4 

    • 1/2 onion, diced
    • 2 tablespoons olive oil
    • 3 cups rice
    • 1/4 cup tequila
    • salt, to taste
    • 1/2 teaspoon cumin
    • 1/2 teaspoon cinnamon
    • 1/2 teaspoon oregano
    • 1/4 teaspoon ground cloves
    • 1 tin diced tomatoes

    1. Heat the oil in the rice cooker and saute the onion until soft.
    2. Add the rice and stir until the rice is coated with oil. Add the tequila.
    3. Add hot water to the 3 cup line and add salt to taste. Add the spices and tomatoes.
    4. Turn the rice cooker on. After the rice is done, let sit for 10 minutes on Warm to ensure the flavours mingle.
